Cake club and carrot cake brownies

I love carrot cake. I don't make it nearly enough as I would like as I HATE grating carrots (I normally end up with more grated knuckles in my cooking) but when I spotted this recipe for Carrot Cake Brownies from Crazy for Crust, I knew I had to try it! One of my favourite bits of carrot cake is the cream cheese frosting so these little brownies sounded heavenly.

The male members of my family are somewhat less keen on cakes that contain vegetables so I decided to reserve this bake for cake club. Did you know I help organise a cake club in Nottingham? We organise cake clubs around Nottingham bi-monthly to raise money for local charities and so far have raised over £3500 in just under 2 years! Yay for cake!
The events are open to any and all bakers and are great social events for meeting new cake lovers and generally having a fun afternoon out with fellow sweet toothed locals. The last event was Easter/Spring themed and there were some great cakes and bakes on show. The Blueberry cake won 'cake of the month' and there were no shortage of chocolatey filled goodies to keep us going.
I'd be hard pressed to pick my favourite cake but I took Milo along to this event (his first cake club!!) and he ate a bit of everything so he's clearly not fussy...
The brownies were really yummy and full of the flavour of carrot cake, you can't see the grated carrot after baking so I bet I could have tempted the boys to try them but why bother when I can eat them all to myself?!
