Making some red velvet cupcakes
I love Red Velvet cake. My only grievence is that you can't really find it in the UK so I only get to eat it if I make it or I happen upon it in my everday travels. I have tried to make it a few times but the recipes I find are always very complicated and I haven't found one thats a good 'fit' for me yet.
My lovely sister in law bought me the Hummingbird Bakery cookbook this week and I couldn't wait to try out some of the recipes as they all look so lovely and of course the first one I had to try was Red Velvet cupcakes. The recipe looked fairly easy and the picture made me want to grab it out of the book and eat it, so that's a good sign!
I don't want to reproduce the recipe for legal reasons but the book is in the shops now and I suggest you give it a go if you liked baked treats galore because that book is strictly for those with a sweet tooth.
The frostings are pretty basic but its good if you're just starting to bake as the recipes can be used as a basis as you build up your talents.
